Thai Green Noodle Soup
This Thai Green Noodle Soup is absolutely delicious—one of my favorite dishes to whip up at home, whether I’m cooking solo or with friends. It’s loaded with protein, veggies, and nutrients, and comes together in just 20 minutes. Trust me, you won’t regret making it. Make it your own back yourself and go with the flow with this one!
Ingredients

✨Chilli
✨Almond Butter or Peanut Butter
✨Soy Sauce
✨Fish Sauce
✨Honey
✨Lime
✨Vegetable Stock
✨Thai Green Paste
✨Sugar Snaps
✨Rice Noodles
✨Tinned Coconut Milk
✨Spring Onion
✨Chicken or Salmon
✨Seasame Seeds

Method
This really is a quick and easy one to make. To begin with grab your blender (I use the good old trusty NutriBullet!), pop in a decent handful of Spinach, knob of ginger, splash of soy sauce and fish sauce, dollop of almond butter or peanut butter and honey with 1 whole lime squeezed in then finished with the whole can of coconut milk. Blend it all up and you'll have a beautiful green sauce.
If you are adding chicken or salmon, get that cooking. If I am using Salmon I tend to bake for 8 minutes and chicken I boil for about 12-15 minutes (size dependant).
Once the above is done grab a large deep saucepan and pour the above in with around 600ml of vegetable stock. Bring to a boil and add in the sugar snaps with the rice noodles which should cook for roughly 3-5 minutes.
Grab your big bowl, add in the noodles and sugar snaps and ladle the green soup into your bowl. Add in your chicken or salmon and top with sliced spring onions, fresh chillis, diced coriander and sprinkle sesame seeds on the top.
And there you have it, a delicious nutrient dense bowl of goodness!
