Asparagus & Strawberry June Salad
A strawberry and asparagus salad is a perfect choice for a June lunch, combining the sweetness of ripe berries with the crisp, earthy flavor of tender asparagus. Tossed with fresh greens, a sprinkle of goat cheese or feta, basil, pine nuts and a light balsamic vinaigrette, this seasonal salad is both refreshing and satisfying. It's a colourful, nutritious option that celebrates the best of early summer produce.

✨Basil
✨Rocket
✨Pine Nuts
✨Feta or Goats Cheese
✨Balsamic Vinegar
✨Olive Oil
✨Salt & Pepper
Method
This one is easy peasy.
Bring some water to the boil and add in your asparagus whole and boil for 3 minutes - so you have a nice crunch! Once boiled, drain them and leave them in cold water to cool down.
Meanwhile, grab a large salad bowl and mix in your diced strawberries, asparagus, basil, rocket, sprinkle your feta or goats cheese in and give it a good toss.
Then grab a pan and pop your pine nuts in, making sure you turn them regularly until they are gently golden and add them to the above.
Finally, to dress the salad, I like to pour over a splash of olive oil and balsamic followed by a large sprinkle of salt and pepper, give it a good mix and there we have it. A delicious in season summer salad!
