Spicy Carrot & Coconut Soup
Spicy Carrot and Coconut Soup is perfect for winter, offering both nourishment and warmth. Ingredients

✨Stock
✨Garlic

✨Salt & Pepper

✨Hot Chilli Powder
✨Almond Milk (Optional)

Method
Start by dicing up the 1 large onion and a around 6 large of carrots, grab a large saucepan, adding in some olive oil or butter and put it on a high to medium heat. Stirring every so often to sweat out the onions for about 10 minutes.
Whilst they are cooking, chop up the 3 garlic cloves, a good chunk of ginger, a handful of parsley and 1 large chilli (add more for more spice!). Adding them all in with the onions and carrots and add a sprinkle of the hot chilli powder. Make sure to keep stirring well for a further 5 minutes and season with salt and pepper generously.
Once the carrots are soft add in a can of coconut milk with either a homemade stock or 1 stock cube with a generous amount of water, stirring it well.
Allow this to bring to a boil and turn it down to a low to medium heat for a further 15-20 minutes.
Next we blend it all up, so grab your hand blender and get it blended! If your soup is too thick, you can either add some almond milk or more water to loosen it up.
I like to enjoy this with a dollop of greek yoghurt on the and some mixed nuts and a juicy large slice of buttery sourdough bread!
