Hearty Winter Root Vegetable Soup

Warm, nourishing, and full of comforting flavors, this Hearty Winter Root Vegetable Soup is the perfect dish for chilly days. Packed with carrots, parsnips, butternut squash, and potatoes, simmered in fragrant herbs and vegetable broth, it fills the kitchen with a heartwarming aroma. Creamy coconut milk adds a velvety touch, while a sprinkle of fresh parsley brings a pop of brightness. Served with crusty bread, this soup is not just a meal—it’s a cozy ritual that warms both body and soul during the winter months.


Ingredients

✨Onion
✨Garlic
✨Carrots
✨Parsnip
✨Butternut Squash
✨Thyme
✨Rosemary
✨Smoked Paprika 
✨Salt & Pepper
✨Broth / Stock
✨Coconut Milk

Method

Dice up 1 onion, 4 large carrots, 2 parsnips, 1 butternut squash and 3 garlic cloves. Drizzle with olive oil in a large baking tray with salt, pepper and sprinkle in some Paprika, rosemary and fresh thyme. Checking it every 15 minutes and tossing the vegetables.

Once the above is cooked and soft, add it into a large sauce pan pouring over a can of Coconut Milk and roughly 5 cups of broth/stock. Cook this out for 5-8 minutes.

When the flavours have all mixed, grab your hand blender or blender and mix the above.

If consistency is thick, add in more liquid to suit your soup as you like.

This soup is hearty, warming and lasts in the fridge a good while, so the perfect Winter soup you can keep coming back too!
