Lemony Butterbean & Courgette Stew
Anyone else on the bean hype BIG TIME at the moment and utterly obsessed with Bold Bean's Butter Beans? If you are, then this lemon and courgette butterbean stew is exactly what you are looking for! It's filling, full of goodness, will last in the fridge and is even more delicious served up with my Garlic Homemade Flat Breads! You can't go wrong with it!

Method
Begin by grabbing a large frying pan or wok. Slice up the courgette into sliced circles and dice up a decent handful of parsley. Add some oil to the frying pan and put the courgette's and parsley into the pan, turning and mixing them regularly for 5 minutes. From there, add in your garlic which has been finely chopped, I like to use 1 or 2 bulbs, dependant on the size of the garlic and cook that for a couple of minutes.
From there, grate the zest of a lemon and add that to the above and squeeze the remaining lemon juice into the pan. Once the courgette's are looking softer, then add in your jar of Butterbeans with a decent spoon of Miso Paste in, a splash of hot water and and mix it all together and season well with salt and pepper. I like to cook this away for a good 12-15 minutes to get all of the flavours to come out, adding in a splash of hot water, should it need a little bit more liquid.
Just before serving, I add in a couple of good handfuls of spinach which may seem like a lot but will wilt down.
I like to serve this dish with a dollop of coconut yoghurt, some roughly chopped feta, and a good sprinkle of chilli flakes, salt and pepper and sometimes a dash of olive oil!
